Razzle Dazzle Peanut Butter Oatmeal Cookies & a Giveaway!

Today we have another PB Crave Peanut Butter feature post and a CoCo Banana Variety Pack GIVEAWAY for one lucky winner!  



If you've read the blog for a while, you probably know raspberry and chocolate is a favorite combination of mine.  The Razzle Dazzle Peanut Butter by PB Crave did not disappoint and is probably my favorite of the whole pack.  I was extremely surprised at the intense aroma and taste of the fresh, tart and slightly sweet raspberries.  So other than eating it directly out of the jar with a spoon and hiding it in the back of a cabinet so nobody would find it, what would you do with this scrumptious peanut butter?

I was very curious if the raspberry flavor would come through in a baked oatmeal cookie.  So we made cookies!  Combine room temperature unsalted butter, Razzle Dazzle peanut butter and one egg.


Blend until smooth.  Then add granulated sugar, brown sugar, vanilla soda, a pinch of salt, oats, dark chocolate chips and a little almond flour.  I forgot to take a photos but you get the idea.


Roll the dough into 1 inch balls and place on a parchment lined baking sheet.  Bake at 350 degrees about 9 minutes.

Allow the cookies to cool on the pan for 5 minutes then remove to a rack.  Cool completely.  
These are almost like a breakfast cookie, not too sweet, not too dry.  This cookie has substance.  There is a hint of raspberry flavor in each bite!

As I couldn't leave well enough alone, I made No-bake Peanut Butter Chocolate Chip Balls with the Razzle Dazzle Peanut Butter too.  These really had a great raspberry flavor.

Razzle Dazzle Peanut Butter Oatmeal Cookies
2 tablespoons unsalted butter, room temperature
1/4 cup granulated sugar
1/4 cup brown sugar, firmly packed
1 egg
1/2 teaspoon vanilla extract
1/2 cup almond flour
3/4 teaspoon soda
pinch of salt
1/2 cup Razzle Dazzle Peanut Butter
1 1/2 cups rolled oats
1/2 cup dark chocolate chips

Blend the butter, egg and peanut butter together until smooth.  Beat in the sugars and vanilla until smooth.  Stir in the flour, soda, salt and oats.  Fold in the chocolate chips and form into 1 inch balls.  Bake at 350 degrees for 9 minutes until lightly browned.  Cool on the pan for 5 minutes then remove to a cooling rack.  Cool completely and store in an airtight container.

  6. Oh, wow!! These cookies look fantabulous!! ;) I haven't camped out in forever, Tricia... last time was on a mountain outside St. George, Utah... in a sleeping bag on the ground. May have broke me forever! LOL!

  7. I'm not a huge fan of camping in general, but once a year my entire family meets at Woods Canyon Lake in AZ. Our annual trip is coming up and I can hardly wait. There will be 33 of us this year!

  13. I think the last time I camped outdoors was when I was 1. I am more of a hotel kind of girl. But, I love the outdoors. Hiking, trails, taking in the scenery... Sedona trip was last week and we can't wait to go back.

    BTW, I have been dying to try this every time you post it!!!

  24. The Razzle Dazzle is my favorite, too! I love that there are mini chocolate chips of both white and dark varities, and I don't think the raspberry is too artificial tasting.

  27. AND I spent 11 summers at camp in Virginia...and made some of the best memories of my life. Thus, I like the type of camping involving cabins, talent shows, meals in the dining hall...and occasional showering. :)

  32. Camping is okay, in small increments...LOL. I'm not one for the heat, so spring and fall are about the only times I would consider camping.

  36. When i was younger we used to go camping all the time - with the kids. I have to admit now that I am older - the hotel bed feels better. Some of our fondest memories are the Wisconsin Dells.

  39. i don't go camping currently - had a favorite mtn in new hampshire when i was younger though which had a fire tower and lots of wild blueberries growing :)
