Blueberry Shortcakes with Whipped Cream Cheese ~ A lightly sweet and simple shortcake loaded with fresh, ripe blueberries, topped with raw sugar and served with cream cheese-whipped cream
Sometimes I get off track. Â It’s easy to do. Â I have a few recipes turn out great and think I can win the Food Network Show – Chopped. Â Well that’s never going to happen because I hate cooking under pressure and they would never invite me anyway. Â But what does happen is I try to make some ridiculous, multi-stepped, extravagant recipe that ends up in the trash. Â Then the cycle continues. I hate failing and try something else that takes half a day to put together.
More often than not … those lengthy, over the top recipes miss the mark and cannot stand up to the simple, less complicated, basic dishes made with fresh ingredients. Â It’s not even summer (just barely spring) and the grocery stores are loaded gorgeous blueberries, strawberries and blackberries. Â I couldn’t pass up these lovely fruits so blueberry shortcakes were on the dessert menu this week.
There are several things I LOVE about this recipe. Â Made with unsalted butter, flour, a small amount of cream cheese, 2 tablespoons sugar and buttermilk, these drop biscuit style shortcakes are mostly sweetened with fresh blueberries instead of a lot of sugar.
 
After folding in the buttermilk and blueberries, the dough is ready for the oven.
Served with a lightly sweet Whipped Cream Cheese and garnished with extra blueberries, this recipe proves what I knew all along, fruit desserts are some of the best … ever.
This recipe makes 8 blueberry shortcakes and would be great with strawberries, blackberries or raspberries too.

Blueberry Shortcakes with Whipped Cream Cheese

A lightly sweet and simple shortcake loaded with fresh, ripe blueberries and topped with cream cheese-whipped cream.
Ingredients
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- ¾ teaspoon Kosher salt, or other coarse salt
- 1 ¾ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ cup cold unsalted butter, cut into small pieces
- 8 ounces cream cheese, divided (2 ounces cold, 6 ounces room temperature)
- 1 cup fresh blueberries, rinsed and dried, plus more for serving
- ¾ cup buttermilk
- â…“ cup powdered sugar, plus more for serving if desired
- 1 1¼ cups heavy whipping cream
- Turbinado sugar for garnish
Instructions
- Line two baking sheets with parchment paper and/or Silpat Mats.
- In a large mixing bowl whisk together the flour, granulated sugar, salt, baking powder, and baking soda. Add 2 ounces of cold cream cheese and the butter, both cut into small pieces. Using your fingers or a pastry cutter, incorporate the butter and cream cheese until the mixture resembles a coarse meal. Put the flour mixture in the freezer for 30 minutes.
- Preheat the oven to 425°F placing the racks in the upper and lower thirds of the oven.
- Remove the flour mixture from the freezer and fold in the blueberries. Gradually add the buttermilk, folding the mixture carefully as so not to break the blueberries. The dough should be sticky and lumpy.
- Divide the dough into 8 even sized mounds on the two baking sheets (4 on each sheet spaced 2 inches apart). Sprinkle each with about 1 teaspoon turbinado sugar.
- Bake, rotating the sheets halfway through, for about 20 minutes or until the shortcakes are lightly browned. Let the shortcakes cool on the pan for at least 5 minutes then transfer to a wire rack to cool completely.
- When ready to serve, beat together the remaining 6 ounces of cream cheese with the confectioners’ sugar with a mixer until smooth. Gradually add the cream beating just until it becomes thick and and smooth. Do not over-beat.
- Serve with shortcakes and blueberries and sprinkle with confectioners’ sugar if desired.

I would tell you how long these last but we wouldn’t know. Â Some of my favorite taste testers stopped by the house, at just the right time, and made quick work of these shortcakes. Â But I’m sure I’ll make these again and next time I may use a combination of fruits like raspberries and blackberries, wouldn’t that be so pretty?!

Love the addition of cream cheese in the biscuits. And I don't know about your failures but I have no doubt that your pictures would make them look beautiful! This looks so much better than strawberries! And blueberries are better for you, right? Especially with all that cream cheese whipped cream!
