The weather man says there’s a change on the way for Northern Virginia … Fall is here. That’s ok, because I’m ready for the cool weather. There’s nothing better than sweaters and brisk morning walks. Before the rain starts and the temperatures drop, I thought I would fire up the grill one more time and cook chicken breasts for dinner.
While I was waiting on the chicken to cook, I snacked on a few Food Should Taste Good Multigrain Chips. These are pretty awesome and I like ’em so much, I’ve never put anything on top – plain is good!
I grilled two marinated chicken breasts and made a salad. I somehow skipped vegetables today so I loaded up the lettuce and spinach. I sliced half a chicken breast and saved the rest for lunch tomorrow. I added a few crumbles of feta cheese, a tablespoon of soy nuts and a shake of chia seeds. I dressed the salad with balsamic vinegar and EVOO. Very yummy and it really hit the spot.
