I’m not sure how this happened but I ended up making a totally green dinner.
I took a day off work today so I could paint the dining room. After a day of painting, I stopped to make dinner and pulled out asparagus, an onion, some whole wheat pasta and green beans that didn’t have long to live.
I sauted the onion in a little olive oil, added the asparagus and then threw in some frozen pesto. I made the pesto this summer when we had a giant bush of basil. I froze the pesto (without cheese) in an ice cube tray then transferred the cubes to a freezer bag. Now I can pop one or two in a dish to liven it up. So my dinner is green with green beans on the side. To make it complete, I spooned it on my green plate and enjoyed! Not a bad dinner but it did need a little color … other than green!
Oh well ~ back to work tomorrow after a long holiday weekend. Birthday cheesecake is on the cooking list for this weekend! Going to get my PJ’s on watch a little Biggest Loser. Have a great evening!
