Roasted potatoes, asparagus and salmon

Tonight was quick and easy dinner night!  We had a few potatoes that were coming of age and asparagus purchased on sale at Wegman’s last night for $1.99 a pound – yeah!  I pulled out the Mr. Misto and sprayed on a little olive oil and seasoned everything with sea salt and freshly ground pepper.
I set the oven to 425 degrees and put the potatoes in first.  I added a couple of tablespoons of pine nuts to the pan and roasted them for a few minutes.  When the potatoes started to brown on one side, I added the asparagus and put the whole pan back in the oven for another 10 minutes.
Husband picked up this sauce and I thought it might be good on the wild caught salmon fillets.
I poured a few tablespoons on the salmon and let it sit for 10 minutes.  Once the vegetables were done, I removed them to a plate and baked the salmon on the same pan for about 10 minutes.  For the last 5 minutes I turned on the broiler and then dinner was done!
It turned out pretty good for a no fuss meal.  The left over potatoes may be good with eggs and cheese for breakfast and the asparagus will be great added to a salad for lunch.
