Cheesy, hot and bubbly Mexican Street Corn style dip with sweet corn folded into a well spiced mixture of shredded cheese, cream cheese, onions and green chilis. You’re going to LOVE this!

– olive oil – corn kernels – salt – garlic cloves – scallions – sweet onion –cream cheese –pepper Jack cheese – mayonnaise – diced green chilis – chili powder – cayenne pepper –lime juice


cook the corn  until slightly charred

add the garlic,  scallion whites and  diced sweet onion

add the cream cheese,  half the pepper Jack,  mayo, green chilis,  chili powder, cayenne  and lime juice

smooth the dip into  an even layer  then sprinkle  with cheese

bake until cheese  is melted

garnish and enjoy!

serve hot from the  skillet with lime  wedges, tortilla  chips, or hearty  Fritos scoops
