For the crust: –regular Oreo cookies – powdered sugar – unsalted butter For the filling: – granulated sugar – cream cheese – large eggs – salt – vanilla extract – sour cream – regular Oreo cookies

Ingredients

Process the cookies and  sugar in a  food processor.   Add in melted butter until it resembles  wet sand. Press into the pan  and bake. Cool and wrap  sides in foil.

Beat the cream cheese until smooth.   Slowly add other  ingredients. Fold in some of  the Oreos. Pour into pan. Top with more Oreos. Bake.

Turn off oven and  prop door open. Let cool in hot  water bath. Move to wire rack and remove foil. Let cool, then  chill overnight.

Decorate with swirls of lightly sweetened whipped cream and chocolate sandwich cookie crumbs.

Don’t over-beat the cheesecake mixture.

Add a few more  Oreos.

Freeze the whole cheesecake, or individual slices.

Or store in the fridge.
