Chocolate Chip Granola Bars

- 4 tablespoons butter
- ½ cup brown sugar
- ¼ cup brown rice syrup
- 2 cups oatmeal
- 1 cup Rice Krispies cereal
- ½ cups lightly salted peanuts
- ½ cup pretzel sticks broken
- ½ cup semi-sweet mini chocolate chips
In a large mixing bowl combine the oatmeal, cereal, peanuts and pretzels.
Heat butter, sugar and brown rice syrup in a small sauce pan. Bring to a boil and cook 2-3 minutes or until sugar is completely dissolved. Pour the syrup over the oatmeal mixture and stir until well coated. Quickly stir in the chocolate chips and press granola into a parchment lined 13x9 inch baking pan. Refrigerate for about 15 - 20 minutes and cut into bars.
