Chocolate Chip Granola Cookie Wedges

Not a real sweet cookie it’s still dessert with just the right amount of semi-sweet chocolate chips, toasted pecans and oat cookie crumble.

Ingredients

  • cup dark brown sugar packed
  • 2 tablespoons canola oil
  • 1 tablespoon butter melted
  • ½ teaspoon vanilla extract
  • ¼ teaspoon Sea Salt
  • ¼ teaspoon baking soda
  • 1 large egg white
  • ½ cup unbleached all-purpose flour
  • ½ cup quick-cooking oats
  • cup toasted pecans coarsely chopped
  • ¼ cup semi-sweet chocolate chips
  • Cooking spray I used Pam

Instructions

  • Preheat oven to 350°F.
  • In a medium size bowl combine the brown sugar, oil, butter, vanilla, salt, baking soda and egg white.  Blend until combined and smooth.  Add the flour, oats, pecans and chocolate chips.  Stir just until combined.
  • Press the cookie dough evenly into a 9-inch glass pie plate coated with cooking spray.  Bake for 13 minutes or until the center is set.  Cool on a rack, then cut into 8 wedges.
