Vanilla Bean Panna Cotta with Strawberry Gelee

It’s creamy, light and cool, and it makes such a pretty dessert.

Ingredients

  • 2 cups heavy cream
  • ¼ cup sugar
  • ½ a vanilla bean split lengthwise, pulp removed
  • 1 packet packet powdered plain gelatin
  • 3 tablespoons cold water

For the Strawberry Gelee:

  • 2 cups sliced fresh strawberries
  • 3 tablespoons cold water
  • cup granulated sugar
  • 1 package unflavored gelatin (1 ½ teaspoons)

Instructions

  • Heat the heavy cream and sugar together in a saucepan. Once the sugar is dissolved, remove the cream mixture from the heat and stir in the ½ vanilla bean and pulp. Cover and allow the mixture to steep for 30 minutes. Remove the vanilla bean and re-heat the mixture until hot, not boiling.
  • Sprinkle the gelatin over the cold water and set aside for 10 minutes.
  • Once warmed again, pour the Panna Cotta mixture over the gelatin and stir until completely dissolved. Pour the cream mixture into the desired cups, glasses or containers. Chill until set, at least 2 hours.

For the Gelee:

  • Sprinkle the gelatin over the cold water and set aside until dissolved, about 10 minutes.  Add the strawberries and sugar to a small saucepan.  Simmer until the sugar is dissolved.  Smash the fruit as it cooks to release the juice.  Strain the strawberry mixture removing any seeds or pulp.  Add the gelatin to the strawberry juice and blend until dissolved.  Allow the mixture to cool to room temperature.  Layer on top of the chilled Panna Cotta and return to the refrigerator.  Chill until set, at least 1 hour.
