Frozen Strawberry Lemonade

The perfect summer drink - frozen strawberries and fresh lemon combine for a puckerlicious frozen treat!

Ingredients

For the strawberry layer:

  • 1 cup frozen strawberries, slightly thawed **
  • ¼ cup simple syrup *
  • ½ cup cold water
  • ½ cup ice

For the lemonade:

  • 2 lemons, juiced (discard seeds but keep the pulp)
  • ¼ cup simple syrup
  • 1 cup ice

Instructions

  • In a blender combine the strawberries, ¼ cup simple syrup, ½ cup cold water and ½ cup ice. Blend until smooth. The mixture will be thick enough to spoon into 2 glasses.
  • Rinse the blender carafe and add the lemon juice, lemon pulp, ¼ cup simple syrup and 1 cup ice. Blend until smooth and pour over the strawberry mixture in the glass.
  • Garnish with lemon slices or strawberries if desired.
  • Serve immediately

Notes

* Simple syrup is made by combining equal parts water and sugar. I used 1 cup granulated sugar and 1 cup water in a small saucepan. Cook over medium heat until it starts to boil and all the sugar is dissolved. Cool and refrigerate until needed.
** We used small strawberries that were halved then frozen. If your strawberries are large, you may want to increase to 1 1/2 cups.
All ingredients may be combined in one blender carafe if desired.
