Divide the brown sugar between two clear mugs. Add hot coffee and stir to dissolve the sugar. Stir in the Irish whiskey and taste.
Whip the cream to soft durable peaks. Invert a spoon over the coffee with the tip touching the side of the mug and top of the coffee. Gently pour the cream over the back of the spoon so that it rests on top of the coffee. Serve immediately garnished with a dusting of cocoa powder if desired. Do not stir but sip the coffee through the cream.
Notes
You need enough sugar in the coffee to support the weight of the cream, otherwise it will sink to the bottom of the mug. It’s still delicious but not as pretty!
