Chocolate Chip Cookies with oats, pecans and browned butter

I wasn’t sure what to name these cookies.  They are loosely based on a recipe for “I want to marry you cookies” but are missing the white chocolate chips and some of the brown sugar.  I also added toasted pecans, browned the butter and substituted quick oats in place of the rolled oats.  What really intrigued me about this recipe was the method.

My husband asked me if I would bake some cookies for his office planning meeting.  I’m always thrilled to send goodies to his co-workers because they gush over the treats and make me feel good.  I am very jealous of their organization, commitment, professionalism and team spirit.  Being one of their favorite bakers makes me feel like I’m part of the team or something.  It’s a small part I know, but no less important!
There are several things that make this recipe less than traditional.  One – you don’t need a mixer, and two – you can make the dough in a large saucepan.
Chocolate Chip Cookies with oats, pecans and browned butterThe end result?  A totally satisfying and really good chocolate chip cookie with toffee overtones.  They have a great texture with a light oat flavor, a touch of cinnamon, and a nutty flavor from the browned butter and toasted pecans.  I also love that they don’t spread all over the pan and kept a thicker profile.

Ingredients

  • 1 cup unsalted butter
  • 1 cup dark brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 cup uncooked quick oats
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • ¼ teaspoon ground cinnamon
  • 12 ounces semisweet chocolate chips (2 cups)
  • 1 cup pecans, toasted and rough chopped

Instructions

  • In a large saucepan melt the butter over medium heat.  Continue to cook the butter until the solids separate and lay on the bottom.  Watch the butter closely and occasionally swirl the pan as the solids brown and the butter begins to have a slightly nutty aroma.  Remove the pan from the heat and immediately add the dark brown and granulated sugars.  Stir until the sugars are incorporated and smooth.  Chill the mixture for 10 minutes.  This butter-sugar mixture creates the toffee flavor that is so unusual in this cookie.
  • Remove the sugar-butter mixture from the refrigerator and add the whole egg, egg yolk, and vanilla. Stir with a wooden spoon or spatula until blended.  Add the flour, oats, baking soda, salt and cinnamon.  Fold together until blended and then add the pecans and chocolate chips.
  • Using a 2-tablespoon scoop, form the dough into balls and place on a parchment lined baking sheet. Chill the dough balls for 30 minutes.
  • Preheat the oven to 325°F.  Bake the cookies on a light colored parchment lined baking sheet spaced 2 inches apart for 14-16 minutes or until lightly browned.  Cool completely on a wire rack and store in an airtight container.
  • Makes 36 cookies

    My work computer did an update (working from home) which caused my VPN to shut down and I couldn’t get back in. What do you do while you’re waiting for a call from IT to fix it? Make cookies!!

    These cookies intrigued me with the browned butter, oats, etc. so I decided to make them. I only had Trader Joe Pecan Pralines, which are sugared pecans, so I chopped them up and they worked beautifully. I followed the directions perfectly but found when I went to mix in the chocolate chips, either the dough or my pot must have still been warm and the chocolate melted a bit. I did the 10 minutes chill in the fridge so I’m not sure what happened. I went with it anyway and continued on. They baked perfectly!

    Mine are darker because of the melted chocolate. But, THEY TASTE AMAZING!! Next time I’ll either leave them in the fridge a little longer than the 10 minutes or transfer the butter/sugar mixture to a bowl to avoid melting the chips. What do you think, Tricia?

    Regardless, my husband and daughter just loved them! And I have to keep the cookie jar out of sight or I’ll be tempted to eat more than I should today. Lol

    Please, Tricia, can you have a bunch of BFF's?! You definitely have to go with Chris' naming idea! The solid roundness of these cookies drew me in. Even delicious choc chip cookies tend to be rather flat. Browned butter seems to make everything better. Combining the browned butter with oats and cinnamon sounds especially yummy to me! I think since you altered the "I Want to Marry You Cookies" recipe, maybe we should call them "I Want to be Your Best Friend Cookies". What do you think?

    These look adorable, and I bet your husband's co-workers appreciate all your amazing treats. This recipe reminds me of one from America's Test Kitchen.. It had browned butter, that toffee flavor, and the dough was velvety smooth. Lucky co-workers; I'd love to taste-test these for you. 🙂

    Marry Me cookies are my all time favorite chocolate chip cookie and your version sounds fantastic! I haven't made a classic chocolate chip in a few years. Melted butter trumped everything else!
