For the Fuzzy Navel version:
1cupfresh orange juiceor no sugar added if pre-made
¼ to ⅓cupvodka
¼ to ⅓cuppeach schnapps
⅛cupAgave Nectar
1cupwhipping cream
½cupplain Greek Yogurt
½teaspoonvanilla extractor orange extract
Instructions
For the Peach version:
Combine the peaches, ⅓ cup Patron, orange juice and honey in a medium mixing bowl.
Taste and add the remainder of the Patron if desired (I used ½ cup).
Add the yogurt and almond extract, fold until well blended.
In a small bowl beat the whipping cream until stiff. Gently fold the whipped cream into the peach mixture with a spatula.
Pour the mixture into the paper Dixie cups or popsicle molds. If using Dixie cups, freeze the pops for about 2 hours or until the mixture begins to freeze enough to hold a popsicle stick upright. Add the wooden sticks to each cup and continue to freeze until solid. Store in an airtight covered container or freezer bag. Snip the edge of the paper cups with scissors and peel away the paper when ready to serve.
For the Fuzzy Navel version:
Combine the orange juice, ¼ cup vodka, ¼ cup schnapps, and the Agave in a medium mixing bowl. Taste and add remaining vodka and schnapps if desired.
Add the yogurt and vanilla and stir until blended. In a small bowl beat the whipping cream until stiff.
Gently fold the whipped cream into the orange mixture with a spatula. Pour the mixture into the paper Dixie cups or popsicle molds.
If using Dixie cups freeze the pops for about 2 hours or until the mixture begins to freeze enough to hold a popsicle stick upright. Add the wooden sticks to each cup and continue to freeze until solid.
Store in an airtight covered container or freezer bag. Snip the edge of the paper cups with scissors and peel away the paper when ready to serve.
