Have you had a cookie lately?
If you haven’t, you could – in a matter of minutes. That’s one of things I loved about this simple chocolate chip granola wedge cookie. While it’s not a real sweet cookie it’s still dessert with just the right amount of semi-sweet chocolate chips, toasted pecans and oat cookie crumble.
Baked in a pie plate then cut into wedges, there’s nothing difficult about it. This would be a great recipe to make with a young baker or someone new to the kitchen.
Made with an egg white, oats and only 1 tablespoon of butter, this can’t be that bad for you either!
We were so excited about a low fat, low calorie dessert that we were certain there was room for ice cream. And wouldn’t you know this granola cookie paired perfectly with our Brown Sugar Bourbon Ice Cream. Funny how things just work out so well.
Chocolate Chip Granola Cookie Wedges

Cook Time: 13 minutes
Total Time: 26 minutes

Not a real sweet cookie it’s still dessert with just the right amount of semi-sweet chocolate chips, toasted pecans and oat cookie crumble.
Ingredients
- ⅓ cup dark brown sugar packed
- 2 tablespoons canola oil
- 1 tablespoon butter melted
- ½ teaspoon vanilla extract
- ¼ teaspoon Sea Salt
- ¼ teaspoon baking soda
- 1 large egg white
- ½ cup unbleached all-purpose flour
- ½ cup quick-cooking oats
- ⅓ cup toasted pecans coarsely chopped
- ¼ cup semi-sweet chocolate chips
- Cooking spray I used Pam
Instructions
- Preheat oven to 350°F.
- In a medium size bowl combine the brown sugar, oil, butter, vanilla, salt, baking soda and egg white. Blend until combined and smooth. Add the flour, oats, pecans and chocolate chips. Stir just until combined.
- Press the cookie dough evenly into a 9-inch glass pie plate coated with cooking spray. Bake for 13 minutes or until the center is set. Cool on a rack, then cut into 8 wedges.
