For many years I’ve searched for the perfect granola bar recipe. ย I think this is the one … love at first bite! ย I love the texture, and the consistency, and the flavor! ย This granola bar is chewy but firm, sweet but not too much. ย This base recipe will be made again and again, and I can’t wait to try other add-ins such as peanut butter, chocolate chips, cinnamon chips, almonds, raisins and countless others. ย It’s not just me, the whole family loved them and you will too!
Starting with butter and honey this entire recipe is made in a mixing bowl with only three minutes in the microwave. ย Easy, fast and delicious.
Press the mixture into a parchment lined 8×8 baking pan and refrigerate about an hour.
Slice into about 16 equal sized 4-inch bars and drizzle with melted white chocolate. ย Be sure to pull the pieces apart before the chocolate sets.
Store in an airtight container for up to a week or in the refrigerator for up to a month. ย Yeah right. ย Our granola bars won’t last that long!
Cinnamon Granola Bars with White Chocolate Drizzle

Cook Time: 3 minutes
Total Time: 18 minutes

This granola bar is chewy but firm, sweet but not too much.
Ingredients
- ยฝ cup butter
- ยฝ cup honey
- ยผ cup brown sugar, packed
- ยผ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- ยฝ teaspoon cream of tartar
- ยฝ teaspoon sea salt
- 3 ยฝ cups quick cooking oats
- ยพ plus up to 4 tablespoons whole wheat pastry flour
- ยฝ cup white chocolate chips melted for drizzling
Instructions
- Line an 8x8 baking pan with parchment paper. Set aside.
- In a large mixing bowl combine the butter, syrup, brown sugar and granulated sugar. Heat on high in the microwave for 1 minute. Remove and stir and repeat cooking on high for another minute. Remove from the microwave and stir again. Cook for one more minute (for a total of 3) but watch the mixture closely as it may boil and bubble over if not watched.
- Add the vanilla, cinnamon, cream of tartar, and salt. Stir until combined. Add the oats folding until incorporated. Add the flour in three portions taking care to mix well after each addition. If the mixture is still very wet and sticky, add more flour one tablespoon at a time.
- Press the mixture into the prepared pan and refrigerate for an hour to set. Slice into desired size bars and drizzle with melted white chocolate if desired.

These come together so fast and easy. They are a perfect after school snack, or just a little something sweet after a long day, and the cinnamon is so satisfying! ย Score!! ย And no I didn’t see the Super Bowl and I think I’m the only person in the whole world! ย I was in bed by 7:00 last night and slept almost 12 hours. ย I must have needed it something awful ๐
