I’m a little embarrassed to tell you this, but I have Popsicle envy. ย Everywhere I looked, all summer long, people were churning out beautiful, fruity, smooth, creamy, colorful, amazing Popsicles. ย And … well … I have not. ย It’s not because I haven’t tried – because I have, at least a dozen times, without much success. ย But I am pleased and proud to tell you that I’ve finally found a recipe that was tweaked and tested, tasted and tweaked until I made Homemade (healthy) Fudgsicles that’s totally blog-worthy!
Sweetened with dates, honey, and a little semi-sweet chocolate, these pops pack an extra punch with the addition of protein powder.
The smooth creaminess comes from coconut milk and melted chocolate. ย Are you loving these now? ย We certainly are!
I was practically doing a happy dance when these came out of the molds without breaking or splitting and were soft enough to bite without falling off the stick. ย I made so many Popsicles this summer that I ran out of sticks. ย Thank heavens Autumn is on the way and Popsicles are on the way out!
Homemade (healthy) Fudgsicles
Prep Time: 10 minutes
Total Time: 10 minutes
Yield: 7
Course: Frozen Treat, Popsicle
Sweetened with dates, honey, and a little semi-sweet chocolate, these popsicles are healthy and delicious!
Ingredients
- 1 14 ounce can coconut milk
- 4 ounces semi-sweet chocolate, melted and stirred until smooth (tested with Ghirardelli chocolate)
- 3 fresh dates
- ยผ teaspoon vanilla extract
- 1 scoop vanilla protein powder
- 3 tablespoons honey
Instructions
- Put all ingredients in a blender and process until smooth.
- Pour into Popsicle molds and freeze for 1 hour. Add Popsicle sticks and continue to freeze for several hours or overnight.
- To remove, run tepid water over the bottom of the molds for a few seconds, taking care not to get water on the Popsicles. Allow the pops to rest for a minute then remove. Repeat if necessary.

I used regular coconut milk and also made it with a lower fat – coconut beverage. The full fat coconut milk was my favorite – but all were good. Thanks!

They look so creamy and delicious! I made some pops with coffee flavoured protein powder last week too, but nothing as fancy as yours. I just used milk and protein powder. I must give this a try too.

I can't believe I haven't made one single Popsicle this summer either! Maybe it's because our summer has been on the cooler side – or maybe I've just been lazy ๐ This look so delicious! I've made a version of Fudgicles in the past but love the coconut milk and real chocolate rather than cocoa powder in yours.

I'm almost glad I ran out of the other skinny sticks because these seemed to stay in better – haha. I think I bought them at a craft store like Michael's or AC Moore. They came in a big package of 100. I used them last year I think when I made the Fuzzy Navel pops in the paper cups. Thanks!
