Oats Fruit and Nut Browned Butter Breakfast Cookie - a perfect grab and go, wholesome, homemade breakfast
What is different about this recipe that makes it a “breakfast cookie” instead of a plain old everyday delicious “oatmeal cookie?”  This cookie is chocked full of dried mixed fruits, healthy oats, and hazelnuts sweetened only with honey and chocolate chips.  While chocolate chips are probably not on every one’s breakfast list, oats, fruit and honey sometimes are the perfect breakfast ingredients.

These cookies were born from pantry leftovers and deemed blog worthy by my husband.  I bet he ate them for breakfast, and lunch, and dinner.

You can substitute any dried fruit or nuts, use dark chocolate chips, semi-sweet or white.  Maybe peanut butter chips would be good too – yummmm.

PRINT RECIPE
The base cookie dough is terrific - all you need to do is add your favorite fruit and nuts!

Ingredients

  • 3 cups uncooked oats
  • 1 cup all purpose flour
  • ½ to 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 cup honey
  • ¾ cup unsalted butter
  • ½ teaspoon vanilla
  • 1 egg
  • ½ cup chopped hazelnuts, walnuts, pecans, almonds would also be great
  • ½ cup mixed fruits like cranberries, cherries, golden raisins, raisins or any combination - chopped dates would be good too
  • 1 cup milk chocolate chips, or semi-sweet or dark chocolate

Instructions

  • Preheat oven to 350°F.  In a large mixing bowl, combine the oats, flour, cinnamon, soda and salt.  Set aside.
  • In a small skillet, melt the butter over medium heat.  Continue to cook until the butter solids pool at the bottom of the pan and begin to brown.  Swirl while cooking and watch the butter carefully to prevent burning.  Once the butter solids are a nice nutty brown, remove from the heat and pour into a heat proof medium sized mixing bowl.  Add the honey to the butter and mix until the honey is slightly melted and fully incorporated.  Add the vanilla and egg.  Blend the butter mixture into the flour and oat mixture.  Add the nuts, fruit and chocolate chips.
  • Place large spoonfuls (2 tablespoon small ice cream scoop) of dough on a parchment lined baking sheet and bake for about 10 -12 minutes or until the cookies are set and the bottoms are lightly browned.  Cool and enjoy.  Store in an airtight container.

Hi Janet – sorry to be so late in replying. We’re traveling out of the country and haven’t been connected to the internet very often. Yes I think you can use sugar, especially brown would be great. I would substitute the same amount of sugar to honey. Good luck – hope these turned out great for you and thanks for trying our recipe!

With the warm, nutty taste of browned butter, the oats, fruits, and a bit of chocolate these sound like the perfect breakfast (lunch and dinner) partner to a cup of coffee! (I am leaving out the nuts because I can't have them but I will just double up on something else!) They really sound chewy and delicious, Tricia! Pinned. I may have to make these tomorrow. 🙂

These cookies look delicious and I'd eat them all day long, too! Oatmeal cookies are the best and they must be so moist with the honey. Lovely!
