Oven-Roasted Salmon

I often think about my young readers and wonder what kind of recipes they need.   Today I believe they (my young readers) need a good, easy, perfect every time – salmon recipe.  For those seasoned cooks, busy moms and foodies – don’t run off yet – you’ll want to try this recipe too!  I am serious about how super simple it is to have a ‘perfect’ piece of healthy fish on your plate in less than 15 minutes.  

Rinse your salmon under cool water and blot dry with paper towels.
Preheat the oven to 350 degrees.

Rub the top of the salmon with a little olive oil and season with your favorite spices.  I’ve used a variety of blended spices, usually something low sodium, and all natural.  I prefer a blend with lots of  peppers and garlic.  Season lightly with salt.

Preheat an oven safe non-stick skillet over medium high.  Place the salmon, skin side up, in the pan.  It should be hot enough to sizzle.  Sear the salmon for about 3-4 minutes or until a crust starts to form.  Carefully flip the salmon over with the skin side down.  Pop it in the preheated oven and bake for 5-8 minutes or until it flakes easily with a fork.

Moist and tender and seasoned with your favorite flavors.  Dinner’s ready in just a few minutes!
Oven-Roasted Salmon
6-oz salmon fillet, skin on
1/2 teaspoon olive oil
1 teaspoon blended seasonings of your choice
salt and freshly ground pepper if desired
Preheat oven to 350 degrees.
Rinse the salmon fillet under cool water to remove debris or scales.  Pat dry with paper towels.  Lightly rub the olive oil over the non-skin side of the fish and season the fillet with your preferred spices.  Press the seasoning into the fish.  Heat a non-stick, oven-proof skillet over medium-high heat.  Place the salmon skin side up in the pan and cook for about 2-4 minutes or until the salmon is seared and starting to form a crust.  Carefully flip the salmon over, skin side down, and place the pan into the preheated oven.  Bake for 5-8 minutes or until the fish is easily flaked with a fork.  
Serves 1

We’ve tried this method with salmon and cod and loved it with both.  Served with a simple salad or fresh vegetables, you’ve just made and served a wonderful, healthy, delicious dinner in minutes!

    We usually do our salmon on the grill (even in winter) but this does look like a delicious and fool-proof way to prepare it, Tricia. So healthy and good – especially wild caught Alaskan salmon, yum!

    Looks delicious, Tricia. I roast salmon probably once a week – my son loves it. I like how you sear it with spices and cook it at a lower temp. I have to try that. I generally roast at a higher temp or broil.
