Peach-Mango Smoothie

When it’s this hot outside, sometimes you just need something cool for dinner.  Ripe, soft, sweet mango with fresh frozen peach slices.  Splash in a little almond milk, orange juice and Greek yogurt and you have a meal!  This would be great for breakfast or lunch or anytime but I had it for dinner!

I’ve started ‘flash freezing’ my extra fruit if I’m not able to eat it right away.  Clean, peel, slice or dice whatever you’re freezing and place them in a single layer on a wax paper covered baking sheet.  Pop the whole pan in the freezer and once the fruit is individually frozen, move them to a storage container to keep for later use.  As they were individually frozen, you can pull out a single piece or several without having to separate the fruit.  I love that! 

Start by pouring 3/4 cup vanilla almond milk in a blender.

Add 1/2 cup of plain Greek yogurt …

 and 1/2 cup orange juice to the blender.
  Peel, slice and dice a whole ripe mango …

 … and throw it in the blender too.

Next add 1 whole large frozen peach.
Add one handful of ice cubes and blend until smooth.  If desired, add a small amount of Truvia sweetener, honey or Agave Nectar to taste.

Garnish with additional frozen fruit if desired.

Pour into a chilled glass and serve!
Peach & Mango Smoothie
(Makes two servings)
3/4 cup Vanilla Almond Milk
1/2 cup Greek yogurt
1/2 cup orange juice
1/2 cup ice cubes
1 whole peach, sliced, peeled and frozen
1 whole Mango, peeled and diced
Truvia Sweetener, honey or Agave Nectar to taste
Blend all ingredients and serve in a chilled glass garnished with additional frozen fruit.

    That smoothie sounds wonderful! I was already planning to make smoothies for lunch today, but now I'm wishing I had peaches and a mango to use.
