What does it take to make a perfect Peanut Butter Sandwich Cookies? ย Is it just the right amount of crispy crunch without crumbling? ย Could it be a smooth, sweet, creamy filling that doesn’t ooze out the sides when you take a bite? ย Maybe it’s the robust peanuty flavor?
I think this cookie is all those things and more. ย It is perfectly delicious.
You don’t need a mixer for this recipe. ย Just blend the dry ingredients together and in a separate bowl combine the butter, peanut butter, sugar, milk and an egg. ย Fold the dry ingredients into the peanut butter mixture and you’re almost done.
Gently fold in finely chopped peanuts for an extra crunchy peanuty punch.
Drop the dough on a parchment lined baking sheet using a cookie scoop or tablespoon measure. ย Gently press each into a 2 inch round.
Bake and cool before filling.
The filling is a simple combination of peanut butter, butter and confectioners’ sugar.
Sandwich the cookies together and press gently to spread the filling to the edges.
Store in an airtight container in a cool place for up to three days.
No worries, I don’t think they will last that long anyway.

Peanut Butter Sandwich Cookies

Ingredients
For the cookie dough:
- 1 ยผ cups dry roasted peanuts unsalted
- ยพ cup all-purpose flour
- 1 teaspoon baking soda
- ยฝ teaspoon salt
- 3 tablespoons unsalted butter melted
- ยฝ cup creamy peanut butter
- ยฝ cup granulated sugar
- ยฝ cup light brown sugar packed
- 3 tablespoons whole milk
- 1 large egg
For the filling:
- 1 cup creamy peanut butter
- 4 tablespoons unsalted butter
- 1 ยผ cups powdered sugar
Instructions
- Preheat oven to 350ยฐF. Line 2 baking sheets with parchment paper and set aside.
- Place peanuts in a food processor and pulse until finely chopped. Donโt overdo it โ you donโt want to make peanut butter. Set aside.
- In a small mixing bowl combine the flour, baking soda and salt until blended. In a medium mixing bowl, whisk together the melted butter, peanut butter, sugars, milk and egg. Add the flour mixture to the peanut butter mixture and blend using a spatula. Fold in the chopped peanuts gently, just until blended.
- Using a cookie scoop or tablespoon measuring spoon, place 12 mounds on one prepared baking sheet. Make sure they are evenly spaced, not to close together. Lightly dampen your fingers and gently press the mounds to a 2 inch diameter cookie. Bake for about 12 minutes (rotate the pan halfway through baking) or until lightly browned and firm to the touch. Allow the cookies to cool for 5 minutes on the pan, then transfer to a wire rack to cool completely. Repeat using the cooled cookie sheet baking 12 at a time. (These cookies do best if you use a cold cookie sheet for each new batch. If you only have one cookie sheet, use a new piece of parchment paper placing the dough on the parchment and then all together on the cookie sheet. As with most cookies, they will spread too much if you use a hot cookie sheet.)
- To make the filling microwave the peanut butter and butter together just until melted and warm. Stir together until blended. Using a rubber spatula fold in the sugar until combined.
- Place half the cookies upside down on the wire rack or clean work surface. Place 1 rounded tablespoon of the warm filling in the center of each cookie. Using a knife spread the filling until itโs almost to the edge. Then place a second cookie on top and gently press down until the filling spreads to the edge.

Could I use more flour or maybe oatmeal in place of ground peanuts. Looking for the perfect pb sandwich cookie recipe. So far yours looks the best.

Hi Brenda. I haven’t tested these with oatmeal or flour in place of ground peanuts so I can’t say for sure. If I had to use something I would go with quick cooking oats. However, you won’t have that great peanut butter flavor and not sure if the cookies will spread correctly. Good luck.

Tricia, these look like girl scout cookies. I think they were called savannahs. I loved those and I am not a huge peanut butter fan. However, I would happily eat a tray of these. I know what you mean by going out. We took a drive in the mountains on Sunday and it felt so good just to get out and do something different!
