I’m once again among the connected, wired in, and virtually available … I have Internet. It has been a long two weeks but I’m really not complaining. Closets were cleaned and projects finished. It was a nice break. The phone didn’t ring, because it was disconnected, and the TV was not blaring in the background. My husband was traveling and the house was quiet. It was all good but I’m glad to be back online!
It is a bit unusual for me but I don’t have a dessert to post today. We saved room for something else this weekend. I made homemade baguettes, which I’ll post soon, and we went on a picnic. I can’t remember the last time we sat on a quilt and talked and relaxed while snacking on simple and delicious bread, fruit, vegetables, and cheese. Oh yeah … and we drank a little wine too. It was really wonderful!
This simple appetizer is also wonderful. Whipped up in just a few minutes it’s ready to serve in no time. A quick trip out to the garden for parsley and rosemary and it’s almost done. Add minced garlic, good sea salt and freshly ground pepper and prepare to be amazed!
We packed up the herbed goat cheese, sliced cucumbers, olives, grapes, a few tomatoes and a loaf of bread and headed out to lay in the shade.
The herbed goat cheese is spread on fresh baguette slices and topped with cucumbers, or tomatoes, or both.
Crisp, creamy, fresh and delicious!
This picnic basket has been in my family for more years than I can remember. It has to be at least 40 years old. I remember my mom always packed it with goodies for our weekend trips to the lake. Good memories.
Today America remembers and honors the men and women who have died while serving in the United States Armed Forces. The sacrifice these fallen hero’s made for our freedom cannot ever be repaid. We are blessed to have brave men and women who volunteer to keep us safe, and allow us to live free, day after day, year after year. Our prayers are with all the Gold Star Families who have lost loved ones.
Herbed Goat Cheese Spread
Prep Time: 15 minutes
Total Time: 15 minutes
Yield: 8 -10 servings
Course: Appetizer
A simple and wonderful appetizer whipped up in just a few minutes.
Ingredients
- 4 ounces fresh goat cheese
- 2 teaspoons fresh parsley minced
- 1 teaspoon fresh rosemary minced
- 1 clove garlic minced
- ¼ teaspoon good Sea Salt
- ½ teaspoon fresh ground pepper
Instructions
- Mix all ingredients together and roll into a 6 inch long log. Wrap in plastic wrap and refrigerate 12-24 hours for the best flavor.
- Serve with crackers or sliced bread. Top with tomatoes, cucumbers and another dash of pepper if desired.

Are you doing anything extra fun this weekend? As you may know, Memorial Day is also the unofficial end of school and beginning of summer. Neighborhood pools are open, graduations have taken place and kids are getting a summer break from school. I think I’ll go BBQ something on the grill!

We were babysitting our granddaughter this weekend so our son and his wife could have a anniversary getaway but now I feel like I got out for a beautiful and delicious picnic.
