Happyย Wednesday!ย It’s time for another ‘garden-to-table’ post on SRFD.ย We recentlyย had friends over to our houseย for dinner.ย ย As I was searching for a good appetizer recipe, I came acrossย these marinated tomatoes.ย I love the ingredient list and decided it would go great with steaks, crusty fresh bread, roasted new potatoes and roasted asparagus.ย ย One of our guests said she didn’t even like tomatoes but had aย second helpingย of this recipe!ย We liked it so much this is our second batch in two weeks.ย Trust me on this, you’ll want to give it a try …ย soon!
I went out to the garden to gather tomatoes and found these beautiful green fruits.ย I thought about making fried green tomatoes but decided to move on to the ripe ones.
There they are.ย Hiding on the bottom of the vines.
Yummy deliciousness!ย My husband has perfected his garden mojoย thisย year.
I picked the ripe tomatoes and cucumbers and headed back in toย the air conditioning!
A beautiful bounty.
I washed 6 good ripe tomatoes, picked fresh basil and parsley and got the other ingredients ready to go.ย You’ll need sugar, garlic salt, seasoned salt, dried thyme, pepper, canola oil, red wine vinegar and 3 scallions.ย I didn’t have green onions last time so Iย used small sweet onions.ย Either way is great.
In a large mixing bowl add the canola oil …
… and the red wine vinegar.
I love the way oil and vinegar looks like the inside of a lava lamp!
Add the sugar to the oil and vinegar mixture.
Next whisk in theย dried thyme,
garlic salt, seasoned salt, and ground black pepper.
Chop the fresh parsley and add it to the marinade. Chop the fresh basil and …ย
…ย slice the scallions.ย Whisk all theย ingredients together and …
… pour the marinade over the tomato wedges. ย Gently toss the tomatoesย and cover.ย ย ย Allow the tomatoes to marinate at room temperature for a couple of hours.ย Stir the mixture occasionally – once anย hour or so.
Be sure to serve the marinatedย tomatoesย with crusty bread to soak up all the juices. ย I’ve added leftoverย marinated tomatoesย to salad and didn’t need dressing!

Marinated Tomatoes Recipe
Prep Time: 5 minutes
Cook Time: 1 hour 30 minutes
Total Time: 1 hour 35 minutes
Yield: 4 people
Course: Salad, Vegetable Side
A delightful dish of fresh garden tomatoes and herbs. Marinated and served with crusty bread to soak up all the juices.
Ingredients
- 3 tablespoons fresh parsley leaves, chopped
- 2 tablespoons fresh basil leaves, chopped
- 1 tablespoon granulated sugar
- 1 ยฝ teaspoon garlic salt
- 1 ยฝ teaspoon seasoned salt
- ยพ teaspoons dried thyme
- ยฝ teaspoons ground black pepper
- ยพ cup vegetable oil
- ยฝ cup red wine vinegar
- 3 whole scallions, sliced
- 6 whole tomatoes, cut into wedges
Instructions
- Whisk together all ingredients except the tomatoes. Add the tomatoes and toss to coat. Cover and set aside at room temperature for several hours or until ready to serve. Occasionally stir the tomatoes while marinating. Serve with crusty bread. Delicious!

I would never ruin the taste of fresh garden tomatoes with garlic salt (and I’m a garlic lover).
Leave this out of the otherwise good recipe.
