For many years my husband has had an occasional late night snack made of peanut butter andย oatmeal, and sometimes a little Truvia mixed in.ย Then this last December my blog daughter Sarah from The Smart Kitchen introduced us to a wonderful Peanut Butter that comes in many delicious flavors.ย You know where we’re going with this.ย I’ve been working on blending my husbands snack idea with this terrific peanut butter.ย Then one day, there it was.
I opened Tasty Kitchen and found a recipe for No-bake Peanut Butter Chocolate Chip Balls.ย Gina had figured out a great blend of ingredients plus a few more I had not thought of.ย Since I can’t leave well enough alone, I put my own spin on it and came up with two versions (so far.)

With flavors like “White Chocolate Wonderful”, “The Bees Knees” and my favorite, “Mighty Maple” this was an easy task.
ย I combined the Mighty Maple Peanut Butter with butterscotch chips and a little Maple Syrup.
ย Put all ingredients in a medium sized mixing bowl and blend.ย That’s it!
ย Then I pulled out the Dark Chocolate Dreams Peanut Butter.ย This is probably my favorite – but I am a chocolate lover.
ย Roll the dough into bite-sized balls and refrigerate.
ย No baking, no added sugar, no worries!
You must give these a try.ย I’ve made them several times and everybody loves them.ย I’m sure there will be more flavors to come, but for now I’ve included two recipes for the cookies pictured.
Peanut butter oatmeal cookie balls recipe

Course: Cookie, Healthy Snack
An easy and healthy no-bake cookie made with whole oats, flax seeds and peanut butter - try both recipes!
Ingredients
For the maple butterscotch:
- ยฝ cup rolled oats
- ยผ cup Almond Flour
- ยผ cup butterscotch chips
- 2 tablespoons ground flax seeds
- ยผ cup unsweetened coconut
- 2 tablespoons pure Maple Syrup
- ยผ cup Mighty Maple Peanut Butter
- ยฝ teaspoon vanilla
For the chocolate chip:
- ยฝ cup rolled oats
- ยผ cup Almond Flour
- ยผ cup Milk Chocolate chips
- 2 tablespoons ground flax seeds
- ยผ cup unsweetened coconut
- 2 tablespoons Agave Nectar
- ยผ cup Dark Chocolate Dreams Peanut Butter
- ยฝ teaspoon vanilla
Instructions
- Mix ingredients together and roll into bite-sized balls.ย Refrigerate and enjoy.

I just found the White Chocolate and Dark Chocolate Dreams at my local Target (in Iowa) and I can't tell you how excited I was! (Love Peanut Butter). These sound great, but we're not huge fans of coconut in my house. (I don't mind coconut milk, but don't like the shredded stuff-I think it's the texture). Would it be ok to leave that out of the receipe or do I need to sub

Since the coconut is unsweetened I think you could leave it out or substitute. I've been thinking about making these with the cinnamon raisin flavored nut butter so I would leave out the coconut in that version. I've also been considering dates as an additive. I'll let you know if I come up with other ideas too! Do you like coconut flour? The texture is the same as almond flour

Could you use wheat flour instead of almond flour?

I don't think it would work since they are not baked. Almond flour is just finely ground almonds so any similar ingredient might work. I think the whole wheat flour would not taste as good raw. Just my opinion!
