Homemade Copycat Thin Mint Cookies with a deep, dark chocolate cookie coated in a thick layer of minty chocolate. Don’t wait for a Girl Scout to stop by your house – keep a batch in the freezer year round!
A long, long time ago, I was a Girl Scout … and a Brownie before that. ย And I bet if I got real serious I could find my old badges and sash. ย Yes I used to sell Girl Scout cookies and yes they’ve been around for a long, long time. ย But now I don’t know any Girl Scouts and nobody asked me if I wanted to order cookies this year. ย So I did what any baker would do, and made my own!

After researching several popular Thin Mint cookie recipes, I found they’re all very similar and all look amazing. ย Deciding which recipe to use can beย agonizing – ha ha.
I recently made some wonderful Chocolate Wafer Cookiesย so I thought I’d go down my own path and adapt that recipe by omitting the espresso powder.
These cookies were rolled extra thin to about 1/8-inch and used Special Dark Cocoa Powder in the mix. ย If I remember correctly Thin Mints have a very dark chocolate cookie on the inside.
Most of my research found recipes recommending semi-sweet chocolate chips as the coating.
But again I was thinking about the dark chocolate on the cookies I remembered. ย I went with dark chocolate chips for the coating and tested two different brands.
We taste tested dark chocolate chips to find the best for coating these cookies.
While the taste of the two different dark chocolate chips were very much the same, the dipping texture and final product was a little better with the Toll House Dark Chocolate Chips. ย The other brand I used was Hershey’s Dark Chocolate Chips. ย The Toll House morsels are full size chips and the Hershey’s are mini’s so I’m sure that made the difference in the melting factor.
These Thin Mint Cookies make lovely little gifts ready to pop in the freezer.
The cookies are better kept in the refrigerator or freezer since the chocolate is not actually tempered to prevent melting on your fingers.

Thin Mint Cookies
Prep Time: 30 minutes
Cook Time: 10 minutes
Total Time: 1 hour 40 minutes
Yield: 48 cookies

A delicious Girl Scout cookie copycat!
Ingredients
- 1 ยผ cups granulated sugar
- ยฝ cup unsalted butter, room temperature
- 1 egg
- 1 teaspoon vanilla extract
- 1 ยฝ cups all-purpose flour
- ยฝ cup Special Dark Chocolate Hersheyโs Cocoa, unsweetened
- ยพ teaspoon salt
- ยฝ teaspoon baking powder
- 1-2 teaspoons peppermint extract, to taste (not spearmint)
- 2 to 4 cups dark chocolate chipsย (see note below)
Instructions
- In a large mixing bowl beat the granulated sugar and butter until fluffy. ย Beat in the egg and vanilla until combined. ย In a separate small bowl whisk together the flour, salt, cocoa and baking powder. ย Add the flour mixture to the butter and beat until combined. ย Transfer the dough to a bag or cover with plastic wrap. ย Refrigerateย for at least an hour.
- Preheat oven to 350ยฐF. ย Roll dough out to โ inch thick on a large piece of parchment or wax paper. ย Using a cookie or biscuit cutter, cut dough into 2 inch rounds. ย Bake on a parchment or Silpat lined baking sheet for 8-10 minutes. ย Since the cookies are a very dark chocolate it may be hard to tell if they are done. ย If you start to smell chocolate, the cookies are done. ย Remove to a wire rack to cool.
- Melt 1 cup of chocolate chips in a deep 2-cup measuring cup. ย I always use the microwave melting instructions on the individual bag or label. ย Melt the chips at 50% power for 1 minute, then stir. Repeat using 50% power at 30 second increments until almost smooth. ย Stir until all chips are melted and add ยผteaspoon of peppermint extract. ย Taste the chocolate and increase or decrease the extract depending on your preference.
- Dip a completely cooled cookie in the chocolate coating both sides. ย Using a large serving or meat fork, hold the chocolate covered cookie over the melted chocolate tapping gently to remove the excess. ย Slide the Thin Mint onto wax paper. ย Cool until the chocolate is set and refrigerate or freeze until ready to serve!
Recipe Notes
- Toll House Dark Chocolate Chips worked best for me. ย
- Note the wide range in the amount of chocolate chips. ย You can dip one side of the cookie and use about 2 cups or use 4 cups to cover the entire cookie. ย They were great either way.
