Assorted Fresh Fruit Popsicles ~ Lightly sweetened with dates, bananas and a drop or two of Stevia, they taste like dessert but are a very healthy snack.
Over the last few years I’ve made a bunch of popsicles, but very few recipes were deemed “blog worthy”. ย That’s what happens when I try toย get all fancy-schmancy. ย Sticking with simple, fresh, natural ingredients, like thoseย in myย Assorted Fresh Fruit Popsicles, is the best plan for me.ย ย Many morningsย I enjoy a fruit smoothie for breakfast and it occurred to me that my breakfast may make a great popsicle and aย perfect summer treat for my grandson.
Do you remember the boxes of assorted double stick popsicles? ย Those were my favorite growing up. ย Back in the day I always picked the cherry or grape flavored pop. ย Now I love all fruits and couldn’t decide which flavor to make, so I made an assortment. ย Lightly sweetened with dates, bananas and a drop or two of Stevia, they taste like dessert but are a very healthy snack.
Blueberry, pineapple, strawberry, mango, and banana – a colorful assortment!
Assorted Fresh Fruit Popsicles
Ingredients
- ยผ cup strawberries sliced fresh or frozen
- ยฝ cup unsweetened coconut water approximately
- โ of a large banana
- 1 large, soft fresh pitted date
- Vanilla Stevia drops to taste 4-6 drops per two popsicles
Instructions
- Place the fruit in a 1 cup measure, Fill with coconut water to the โ cup line. Place the fruit, coconut water, banana and date in a single serve blender cup or a larger cup appropriate for a stick blender. Process until the mixture is smooth. Add 4-6 drops of Stevia and blend until smooth. Fill two popsicle molds. Freeze for about 30 minutes then add the popsicle sticks and return to the freezer until firm. Repeat with other fruits if desired.
Recipe Notes

- Our favorite flavors include mango, pineapple, strawberry, blueberry, banana and orange

This is so smart! I love how you made the varieties to show us and it’s perfect that the recipe makes just 2 so we can play around with it. I do remember those popsicles that you mentioned (the grape was my favorite, too) but this is so much better. It’s actually a healthy treat and they look so amazing with all the various colors. Can’t decide which flavor I like more but having the choice is great! Enjoy the weekend!
Tricia Buice
Thanks Monica – they are easy to eat too, not rock hard with great flavor. I love using the coconut water as a liquid base. Hope you’re having a great weekend!

They might be healthy but they look like dessert to me. I’m sitting here hovering next to the heater this morning but I could definitely eat one of these. You and your grandson are lucky indeed!
Tricia Buice
Thanks Maureen – sorry about the winter weather – but your blue sky looks pretty fantastic. We’re in the Virginia hazy, hot and humid trend – after the rain stops of course! Have a great weekend!

Toni | BoulderLocavore
I remember the double stick popsicles! AND I just binged on Mad Men from the first episode to the last (7 seasons I think) with one of their ad customers being Popsicle and featuring the double stick version. Break it in half and share with a friend. YOUR popsicles are not only lovely but smart and practical and fun! Who wouldn’t love a healthy, pretty popsicle for breakfast in the summer?!
Tricia Buice
Haha Toni – we haven’t binged on Mad Men yet – but recently got into Blue Blood – as my husbands boss told us to watch it. I think it has 4 or 5 seasons – who knows! I love these – especially the pineapple and strawberry – and all natural – wooohooo! Have a great weekend!
Jennifer @ Seasons and Suppers
Beautiful and I love all the different combinations you can make!
Tricia Buice
Hey Jennifer – That way we don’t get tired of one flavor or another – they are all good! I can’t wait for my grandson to try them. Have a wonderful weekend!
