Over the last few years I’ve made a bunch of popsicles, but very few recipes were deemed “blog worthy”.  That’s what happens when I try to get all fancy-schmancy.  Sticking with simple, fresh, natural ingredients, like those in my Assorted Fresh Fruit Popsicles, is the best plan for me.   Many mornings I enjoy a fruit smoothie for breakfast and it occurred to me that my breakfast may make a great popsicle and a perfect summer treat for my grandson.

Do you remember the boxes of assorted double stick popsicles?  Those were my favorite growing up.  Back in the day I always picked the cherry or grape flavored pop.  Now I love all fruits and couldn’t decide which flavor to make, so I made an assortment.  Lightly sweetened with dates, bananas and a drop or two of Stevia, they taste like dessert but are a very healthy snack.

Assorted Fresh Fruit Popsicles

Prep Time: 5 mins
Total Time: 5 mins
Yield: 2 popsicles

PRINT RECIPE
 Lightly sweetened with dates, bananas and a drop or two of Stevia, these popsicles taste like dessert but are a healthy snack.

Ingredients

  • 1/4 cup sliced fresh or frozen strawberries
  • approximately 1/2 cup unsweetened coconut water
  • 1/3 of a large banana
  • 1 large, soft, fresh pitted date
  • Vanilla Stevia drops to taste 4-6 drops per two popsicles

Instructions

  • Place the fruit in a 1 cup measure, Fill with coconut water to the 2/3 cup line. Place the fruit, coconut water, banana and date in a single serve blender cup or a larger cup appropriate for a stick blender. Process until the mixture is smooth. Add 4-6 drops of Stevia and blend until smooth. Fill two popsicle molds. Freeze for about 30 minutes then add the popsicle sticks and return to the freezer until firm. Repeat with other fruits if desired.

Recipe Notes

Substitute any fresh or frozen fruit in place of the strawberries.
 
This recipe makes two popsicles - repeat 4 times, if desired, to make 10 popsicles.

    So many choices, and they all look good! My grandson will be spending the summer with me and I’m sure we’ll tuck some of these into the freezer. I can already predict that strawberry will be his favorite! 🙂

    This is so smart! I love how you made the varieties to show us and it’s perfect that the recipe makes just 2 so we can play around with it. I do remember those popsicles that you mentioned (the grape was my favorite, too) but this is so much better. It’s actually a healthy treat and they look so amazing with all the various colors. Can’t decide which flavor I like more but having the choice is great! Enjoy the weekend!

    Tricia, I always drool over your photos. To be honest I always had a hard time with those double stick popsicles. One always broke off and left me with a mess! I think these would be like way better-in more ways than one!

    These would DEFINATELY hit the spot for me! YUM!!! I’ve never heard of “Vanilla Stevia” before! Will have to look for that in the store! Your popsicles are PERFECT too! Mine? They would fall apart, I’m SURE! LOL I’m SURE your grandson WOULD LOVE THESE!!! 😉

    I remember the double stick popsicles! AND I just binged on Mad Men from the first episode to the last (7 seasons I think) with one of their ad customers being Popsicle and featuring the double stick version. Break it in half and share with a friend. YOUR popsicles are not only lovely but smart and practical and fun! Who wouldn’t love a healthy, pretty popsicle for breakfast in the summer?!
