You’re going to love this recipe for a simple and delicious Greek Salad Hummus Sandwich!

This might look like a plain old veggie sandwich, but it’s so much more! The Greek flavors are bright, briny, fresh and delicious and the sandwich is easy to put together. We’ve been enjoying this exceptional sandwich since 2013 when it was first published here on SRFD. I’ve made it using all kinds of bread, rolls and pitas too; it’s all good!
The bottom layer is a combination of crumbled feta, olive oil and chopped kalamata olives. Next, top the feta with sliced Pepperoncini, crisp cucumbers, ripe tomato and sliced red onion marinated in lemon juice and olive oil. The leftover onion marinade is sprinkled over the remaining bread slices then topped with a smear of hummus. Oh geez – it’s so good!!!

We recommend a good hearty, thick-sliced seedy loaf with plenty of flavor and texture for this hummus sandwich.

Bread is a special treat for me these days. We don’t eat bread regularly and only on days when I plan to get on the treadmill or go to the gym. When I get to splurge, I want something full of nutty goodness and plenty of seeds too! This store-bought Marathon Bread from Wegman’s Grocery Store is a favorite, especially as the base for this flavorful hummus sandwich. Use your own favorite store-bought bread or homemade. Don’t forget to think outside the lunchbox too. Stack these fresh ingredients on a naan style flatbread or pre-made pizza dough round. You won’t regret it!

This sandwich hits all the flavors of a great Greek Salad combined with the creamy goodness of flavorful hummus.

I used to make my own hummus frequently but for convenience I often pick up a container of my favorite Sabra Classic. It has the perfect consistency for spreading on a sandwich or cracker and helps hold all the extras together. You may be surprised to know that this sandwich can be made up to a day ahead. Wrapped tightly in plastic wrap and refrigerated until needed, this hummus sandwich is great for picnics, lunchboxes, traveling and even a light dinner. No worries if you have extra, it keeps very well!

This recipe makes four regular sized sandwiches but is easily doubled if needed.

Greek Salad Hummus Sandwich

A simple and delicious Greek Salad Hummus Sandwich!

Ingredients

  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil divided
  • ½ small red onion thinly sliced into rings
  • salt
  • pepper
  • 4 ounces crumbled feta
  • 10 kalamata olives chopped
  • 1 cup prepared classic hummus
  • 8 thick slices rustic bread or 4 pitas
  • ½ English cucumber thinly sliced
  • 1 large tomato sliced
  • 4 Pepperoncini thinly sliced, stems removed

Instructions

  • In a small bowl combine the sliced onion with 1 tablespoon lemon juice and 1 tablespoon olive oil.  Season with salt and pepper to taste. Set aside.
  • In a separate small bowl combine the feta, olives and 1 tablespoon olive oil and smash lightly with a fork until blended.
  • Divide the feta mixture between 4 slices of bread. Scatter the Pepperoncini peppers on top of the feta.
  • Top with the sliced cucumber, tomato and onion.  Drizzle the onion marinade on the 4 remaining slices of bread and spread with hummus. Season with salt and pepper and fold both sides together.

Recipe Notes

  • Sandwich may be made ahead, wrapped tightly in plastic wrap and served within 24 hours. Keep refrigerated or in a cooler until ready to serve. Great for picnics!

    This sounds absolutely amazing, I can’t wait to get to the grocery store! I’m currently on the fight of my life with Pancreatic cancer and my tastebuds don’t recognize flavors like they used to, so I “memory” eat. This stems from chemotherapy, common side effect, but unpleasant in so many ways. Everything about this sandwich will be a delicious meal to myself! Thank You!

    wow! This is so perfect in every way. The hummus, bread, veggies, feta…. When we went on road trips years ago I always made white bean dip sandwiches, and the girls always complained because the car smelled like garlic! But I never made them fancy like this, with all of the goodies. Brilliant.

    There is nothing in this world that can touch a good sandwich. I love veggie sandwiches, but they are usually pretty bland, this one looks like it's got tons of flavor. <br />Those flowers are stunning…I used to have one of those vines in our old house, you should have those photos framed!
