    Cinco de Mayo has become one of my favorite food holidays. Love Mexican, Tex-Mex, New Mexican, Cali-Mex, and any other sort of Mex there is — and we get to celebrate them all! Terrific roundup of goodies — thanks.

    So many recipes! The corn really jumps out at me. I’m going to save that for July 4th, when good corn starts showing up. This sunday I’m making queso fundido. I’ve made so many variations of warm cheese from around the world, but never actually used a Mexican recipe (Rick Bayless in this case.) Looking forward to it. Happy C de M!
